Grapes for Perbacco come from different Nebbiolo vineyards. Fermentation lasts 3-4 weeks. Each parcel is vinified and aged separately until the selection is made regarding will be included for the blend of Perbacco or the ones that will keep aging to become Barolo Castiglione. Total aging is approximately 2 years. After malolactic fermentation both in barrique and big Slavonian casks, the wine keeps aging in oak for 2 years. Blending in stainless tanks takes place prior to bottling.
A velvety, medium-weight wine with generous fruit and notes of menthol, spices and red berries. Bold, intense and powerful when young, this wine gains complexity and elegance with age.
