Grape: Sauvignon Blanc
This is not your typical Sancerre. Sébastien Riffault picks his grapes very late in the growing season, after bortrytis (noble rot) forms. They undergo malolactic fermentation and are aged on the lees. Farming is organic, fermentation takes place slowly in old barrels with native yeast, and no sulfur is added.
Golden yellow color. Dry and aromatic, with more texure and richness than a classic Sancerre. Notes of ripe yellow fruit and honey, but with a distinct freshness and minerality.
