TOMORROWS WINE

Country: Italy
Region: Trentino-Alto Adige
Type: Orange Wine
Grape: Nosiola
The Salvetta family were the very first in the region to bottle a varietal Nosiola and today their expression of this local grape variety is widely considered to be one of two definitive examples, along with the wines of legendary winemaker Elisabetta Foradori.
Situated in the picturesque village of Sarche, a few miles to the south of Trento, the Salvettas’ three vineyards, totaling just 1.5 hectares of plantings, are set amidst a backdrop of towering limestone cliffs on all sides. Though this property had been farmed in some way for over 600 years, it was Dario Salvetta who is responsible for the estate's success, having purchased it in 1930 and planted a portion to native alpine grape varieties to produce both still and sweet wines that quickly rose to prominence in the region. Two generations later, Dario’s grandson Francesco is now at the helm of Salvetta, having implemented widespread improvements in the farming, achieving organic certification in 2012 and focusing the family’s efforts entirely on the championing of the white grape Nosiola.
Hailing from 1.5 hectares of organically farmed vines, the Salvetta’s Nosiola sees 7 days of skin-maceration prior to 8 months aging in old Acacia barrels, followed by 4+ years of aging in-bottle. Golden in color, richly textured, deeply aromatic, and complex. Chamomile, hazelnut, and mountain grass mixes with with rich citrus notes. Elegant, with a touch of salinity and firm backbone of acidity.
