One of the most well respected vignerons naturels in Languedoc, Rémi's philosophy is simple: Le Temps Fait Tout, "Time Does It All". He is a quiet and thoughtful man, who makes wines that reflect his personality. He is commited to not adding or removing anything from the raw grapes. Rémi has 6 hectares near the town of Pezenas in Herault, where he grows Grenache, Syrah, Carignan, Clairette, Ugni Blanc and Terret. The soil in the vineyard is heavy with granite and quartz on top of a body of clay, which retains heat and rainwater and helps to ripen the grapes evenly. Rémi's wines are recognized for their lightness and purity of fruit.
Tout Blanc is Rémi Poujol's only white wine, a blend of southern varietals. The Viognier is macerated whole-cluster in ceramic amphora, while the rest of the fruit is direct pressed. All the grapes are aged separately and then blended according to Remi's taste and the balance he wants to achieve.
A fresh and textured wine that is bright and crisp yet complex, with a note of citrus pith and salty minerality.
