Brothers Guillaume and Charles Soulier make wines from fruit grown on their 8-hectare estate in Saint Hilaire d'Ozilhan, Gard. The vineyards are planted on limestone scree hills and rolled pebbles in the Rhône Valley between Nîmes and Avignon. Using organic viticulture, the brothers work the soil with horses while sheep and goats manage weeding. The wine undergoes minimal intervention winemaking with natural fermentation and light handling.
Bleu Roche is a Cinsault that undergoes carbonic maceration for nine months, before aging in terracotta jars without any topping up. Round in body, delicate and complex, with tantalizing notes of truffle, clove, and orange zest.
