Axel Prüfer is originally from East Germany, but left to make wine in France and ended up settling in the Languedoc. Axel is committed to making his wines in a stripped-down, non-interventionist way and by fastidiously practicing organic viticulture, he is able to harvest pristine fruit that requires no additions.
100% Cinsault hand-harvested at first pass from vines grown in decomposed limestone, quartz, and granite soils. The grapes undergo 5-7 days carbonic maceration prior to pressing. Spontaneous fermentation before a roughly 6 month élevage. Bottled unfined, unfiltered, no additional sulfur. 9.7% ABV. This light, refreshing red wine is bursting with red summer berries and vibrant acidity. Serve chilled.
