Domaine de Gimios is run by mother & son Anne-Marie and Pierre Lavaysse in Saint Jean de Minervois. The estate covers approximately 5 hectares of vines, made up of sixteen plots with native varieties, some of which are over a hundred years old. They farm organically and biodynamically and practice minimal intervention in the cellar, including indigenous yeasts and no added sulfur. 

This Pet-Nat is 100% Muscat à Petit Grains from vines 25-100 years old vines planted to Jurassic limestone rich in marine fossils at 320 meters above sea level. Beautifully textured, with notes of kiwi, lychee, pink grapefruit, verbena, and orange .
