Domaine de Gimios is run by mother & son Anne-Marie and Pierre Lavaysse in Saint Jean de Minervois. The estate covers approximately 5 hectares of vines, made up of sixteen plots with native varieties, some of which are over a hundred years old. They farm organically and biodynamically and practice minimal intervention in the cellar, including indigenous yeasts and no added sulfur.
Fresh and vibrant, with notes of fresh strawberry, watermelon, elderflower and a hint of delicate herbs, offering a perfect balance of fruitiness and minerality. Refreshing acidity and delicate finish.
