Domaine de Gimios is run by mother & son Anne-Marie and Pierre Lavaysse in Saint Jean de Minervois. The estate covers approximately 5 hectares of vines, made up of sixteen plots with native varieties, some of which are over a hundred years old. They farm organically and biodynamically and practice minimal intervention in the cellar, including indigenous yeasts and no added sulfur.
From a parcel of 160+ year-old co-planted pre-phylloxera vines, this is a co-ferment of around 15 different varieties (Carignan, Terrets in various hues, Grenache, Alicante, Cinsault, Aramon, Mourvèdre, and others). Grapes are hand-harvested, whole-bunch macerated and spontanouesly ferment in stainless steel vat prior to pressing and aging for 9 months, also in steel. Bursting with aromas of blackberry and cherry. The palate is fresh, dry and bursting with ripe black fruits.
