Hammerling's goal here was to create a light, fun style of red wine that feels a bit like a rosé, but with more weight. 50% of the grapes were fermented carbonically, while the rest was direct pressed and barrel fermented. It was aged for 11 months in barrel before bottling with minimal sulfur.
This wine is all about juiciness with a bit of a brambly edge. The gentle handling makes this wine taste fresh, approachable, and focused. It was named after one of our favorite Seijun Suzuki films: Youth of the Beast. A boldly stylized Japanese gangster flick from the mid 60s that’s flashy and unpredictable. Notes of raspberry, plum, and rose hips.
