Grapes for this wine are sourced from a combination of organic and dry-farmed coastal sites and harvested slightly riper than is typical in Champagne. In these cool climate sites, grapes retain their acidity amazingly well, even at slightly higher ripeness.
The grapes were hand-harvested and fermented in a combination of stainless steel and neutral French oak barrels. The wines were aged separately for 5 months before blending and bottling for secondary fermentation with added organic yeast and sugar. 30% of the blend underwent malolactic fermentation to soften the acid profile and lend a savory quality to the wine.
This wine showcases the lean, mineral-driven quality of coastal Pinot Noir and Chardonnay sites, rounded out by the more generous Pinot Meunier. Notes of mushroom and earth lead into flavors of lemon zest, pear and marzipan. Wet stone punctuates the long finish.
