The grapes were pressed whole-cluster, settled overnight and fermented in a combination of stainless steel and neutral French oak. Primary fermentation with native yeast followed by secondary fermentation in bottle. Aged 16 months in bottle before disgorging by hand. 

Dry, crisp and tangy, with notes of red apple peel, pomelo, and lemon zest.
