The fruit is all sourced from organic vineyards and the winemaking is low-intervention, yielding in wines that are alive. Spontaneous fermentation in neutral oak with indigenous yeasts, En Cavale wines are unfiltered and unfined. This Sauvignon Blanc is bright and fresh, with tropical aromas and flavors.
