The fruit is all sourced from organic vineyards and the winemaking is low-intervention, yielding in wines that are alive. Spontaneous fermentation in neutral oak with indigenous yeasts, En Cavale wines are unfiltered and unfined. The Fox Hill Sangiovese has notes iof tart blood orange, tangy blackberries, an iron-y minerality, and a fresh, crunchy finish.
