Philippe Valette is known as one of the godfathers of natural winemaking, especially in the Mâcon. He organically farms his 15 hectares of Chardonnay vineyards on the best terroirs in and around the village of Chaintré. Harvest is done by hand, and yields are low. Valette's wines are noted for their concentration. They are tactile wines, expressing generous minerality and saltiness. Depending on the cuvée and the vintage, Philippe ages his wines in old oak from 6 months to as long as 5 years.
Mâcon-Chaintré Vieilles Vignes is made from 65-year-old vines, and was bottled for a full two and a half years after harvest; 80% aged in oak and 20% in tank. Bright, light white-gold wine with aromas of ripe apple, hazelnuts and minerals, with a saline lift. Bracing acidity and a lovely texture.
