Organic/biodynamic farming. Hand-harvested. 10 day spontaneous fermentation on skins in open cement tanks and aged in glass-lined cement tanks. Bottled unfined and unfiltered, with no added sulfur.
Red-violet in color, with aromas of cherry, black pepper, cinnamon and warm terracotta. Plush, pure and bright, with notes of sour cherry, raspberry and red currant, framed by bright acidity and good tannins. Tangy-peppery finish. Serve lightly chilled.
