Organic farming. Calcium/clay soils. Hand-harvested. Fruit is de-stemmed and gently pressed. 12 day maceration, spontaneous fermentation in amphora with indigenous yeasts. Aged 12 months in amphora. Minimal sulfur added.
Youthfully concentrated with dark fruit and brisk, intense tannins that give it a rich, tarry feel. On the nose, bramble, mulberry, and elderberry with a light hint of tar and mocha. Plenty of energy in the fruit keeps this wine fresh as the tannins mellow.
