From the famed Château Simone comes this declassified (yet still exceptional) version of the Palette Rose based around younger vines.

After crushing and partial destemming, crop is spontaneously co-fermented in foudre for 13-15 days. The wine spends 6 months aging on the less, followed by 8-10 months in neutral barrel. Bottled unfiltered.

Deep, rich color. Energetic and taut, with elegant aromas, ample body, and freshness.
