Spergola used to be widely found in Emilia-Romagna, and works beautifully in sparkling wines because of its naturally high acid. This wine acquires its bubbles through a second fermentation in bottle. On the nose, there is a lovely hint of marmalade, but this is a serious food wine that is rich and dry, with strong tannins and sometimes some sediment, but enough acidity to keep it fresh and bright.
