After a career in horticulture and some time working in the restaurant business, Damien Bastian became interested in natural wine. He worked for a well-known Savoie-based winemaker, Dominique Lucas, before settling on 75 acres of chasselas vines in the Marignan appellation (Savoie) less than 1km from Lake Geneva. “Ça Boit Libre” is a play on words; drinking freely (without additives), and Freedom for Savoie (Savoie LIBRE).
Organic/biodynamic farming. Hand-harvested Chasselas gets skin maceration before pressing, then spontaneous fermentation and 12 months aging in barrique. Light orange in color and incredibly aromatic, this wine is fresh, fluid and vivacious. On the nose, candied and exotic fruits alongside subtle smokiness. The palate delivers perfectly balanced acidity and minerality with orange and mandarin notes and a hint of bitterness. Very light tannins keep everything elegant and fresh.
