Type: White Wine
The farming is certified organic and the harvest is done by hand. The fruit is destemmed, gently pressed and fermented spontaneously with indigenous yeasts in tank. The wine goes through malolactic fermentation and is aged on its lees without bâtonnage or racking in a combination of used Burgundy barrels, 2500 liter foudres and enamel-lined steel tank for close to a year. Bottled unfined and unfiltered with just a touch of sulfur at bottling.
This is balanced and elegant Chardonnay with just the right amount of acidity to richness ratio.
