Eduardo Torres learned to make wine on his native Canary Islands before moving to Sicily in 2012, where he took an internship with Arianna Occhipinti, followed by a position at Passopisciaro, one of Sicily’s most highly regarded wineries.
In 2014, Eduardo vinified his first vintage under his own label. He focuses on indigenous varieties, and winemaking is as low-intervention as possible. 2020 was the first vintage of this bottling, from three parcels averaging 80 years old on the east face or "versante est" of Mt. Etna, Eduardo's first from vines not on the "versante nord" (which lends its name to his main white and red wines). Like many of his vines, these are alberello or bush plantings which he farms organically and harvests by hand. The soils are sandy volcanic ash with elevation ranging from 750 to 900 meters. The bunches were hand-harvested, destemmed, fermented spontaneously with native yeasts and without sulfur in concrete. The wine was aged for 10 months in tonneaux and then bottled unfined and unfiltered, with only a tiny amount of sulfur.
