The cellar hand for Raul Perez and his nephew, Cesar Marquez is a rising star in the region. Fermentation is carried out in 1,000 liters open container with 25% whole cluster. The grapes are gently stepped on so that a part of the skins remain whole in the fermentation, which is carried out spontaneously with wild yeast. The maceration was carried out for 60 days, in which the work consisted of sinking daily the cap manually, without breaking it. After the bleeding and pressing were done, it was left to settle for 7 days. After this, it was put into two 600-liter barrels and left to stand for 1 year.
This wine is powerful, yet elegant with notes of red cherry, cranberry, plum and spice. The soil provides a tension and chalky minerality. An open, precise, deep and complex wine with fine tannins and a slightly saline finish.
