Paolucci's 'Iacopone' Bianco is made entirely from Grechetto, a grape capable of producing wines that balance power and freshness. The wine is named after its maker, but also as a tribute to Jacopone di Todi, a local friar and author considered to be one of Italy's most important poets of the Middle Ages. These nods to Umbrian history are a common theme for Paolucci, a vigneron who has always looked to the past to inform his methods.

Certified organic fruit. 48 hours of skin contact, followed by aging in stainless steel. Minimal sulfur and no other chemicals used. Deep golden and textural, with yellow orchard fruit, sweet green herbs, and a  lovely nutty quality.
