A new wine from Marie-Lise and Thomas, this pet-nat is made up of 100% Grolleau, direct pressed over the course of 24 hours before fermenting in stainless steel tank. Once bottled, it spends three years on lees before disgorgement, followed by another six months in bottle. No added sulfur.
Bright and crisp, with notes of wild strawberry fruit and a touch of brioche, with precise acidity that perfectly balances the more broad, creamy texture. It finishes crisp and dry, with energy and purity.
