Patrick Bouju started Domaine La Bohème in 1998 in the village of Glaine-Montaigut in the Auvergne region. He has several small plots of vines around his village, with some vines aging 120 years. Patrick does everything himself, from working the organic vineyards by horse to bottling, labeling, and bookkeeping.
This cuvée is made from 100% Pineau d'Aunis grapes sourced from Domaine Delobel in Touraine, Loire Valley. The grapes undergo a brief whole-bunch maceration, followed by spontaneous fermentation with native yeasts, adhering to minimal-intervention principles. The resulting wine is light in color and body, but with character and complexity, reflecting the unique qualities of the Pineau d'Aunis variety.
Juicy red berry notes, accompanied by the distinctive cracked pepper characteristic of Pineau d'Aunis, and lifted by refreshing acidity.
