Sébastien Christophe makes his wines in Fyé, a tiny commune nestled in Chablis. After graduating from enology school, Sébastien returned to his home in Chablis, where he inherited a half-acre of Petit Chablis. Slowly, vine by vine, Sébastien built upon his initial holding until eventually he amassed 9 hectares of village-level Chablis and small plots in some of the top Premier Cru sites: Fourchaume, Montée de Tonnerre and Mont de Milieu.
Farming is organic. Sébastien hand-harvests, and ferments with native yeast in mostly stainless steel, except for small amounts of old wood in the Premier Crus. All grapes are hand-harvested and fermented with wild yeasts in mostly stainless steel for 7-8 months before bottling. Made in the tradition of the region, Christophe coaxes elegant wines from his vineyards and has become one of the most exciting producers in the region today, focusing on elegant, mineral wines of nerve and tension, with little to no maturation in oak.
Classic Chablisienne aromas of flint, wet stone and citrus. The palate is alive with savory fruit, textural grit and dimension, and fresh acidity. Excellent minerality and a long finish. This wine is a perfect example of how complex a Chablis village wine can be.
