Alice Bouvot is the proprietor of Domaine L'Octavin, comprised of 5 hectares of vines in the Arbois region of the Jura. Alice started her domaine in 2005 with just 2 hectares and over the years has bought small plots and slowly increased the winery's production. L’Octavin is Demeter biodynamic certified--wild grasses, weeds, insects, and animals all have a place in their vines, creating a true ecosystem that gives a deeper meaning to her wines.
Since 2009 all L’Octavin wines are made with no additives at all. The grapes are destemmed by hand and fermented without the use of sulfur, cultured yeasts, or other additives. Most of the wines are fermented and aged in fiberglass or steel tanks, but only at the ambient temperature of the cave. Most of L’Octavin wines are made to reflect single plot expression.
Average age of vines is 50 years. Hand-harvested. Destemmed, 6-week maceration, spontaneous fermentation in barrels with indigenous yeast. Aged 12 months in Burgundy barrels.
Generous texture and lovely acidity backed by very subtle tannins, with notes of strawberries and cherries, and a subtle herbaceous quality. Some CO2 remains in this wine to enhance its freshness, but these bubbles soon disappear in the glass.
