Château de Béru has been around since the 12th century & in the family for 400 years. This Chablis is produced from a hillside vineyard rich in Kimmeridgian soil, mainly composed of crushed limestone and marine fossils. The vines are approximately 30 years old. After a conversion to organic viticulture, the domaine also works biodynamically.
The grapes are handpicked and direct-pressed at low pressure and the juice is transferred to stainless steel tanks for fermentations. The wines are aged during 14 to 16 months and are bottled without any fining or filtration and minimal sulfur is used during the process.
This wine is named after estate owner and winemaker, Athénaïs de Béru. Floral nose, bright acidity and strong minerality, with notes of citrus and green apple.
