All of Folk Machine's wines are un-inoculated (fermented without adding commercial yeast). Malolactic fermentations are spontaneous and they avoid all commercial additives. They primarily use older oak barrels. Only low doses of sulfur are added to the wines and generally as close to bottling as possible to keep the wines alive in the cellar.

Inspired by Loire Valley Chenin blancs, this wine is higher in acidity, a bit more austere, but still savory, refreshing, and textured. The juice were fermented with naturally occurring yeast in a combination of concrete eggs, stainless steel tanks, and a few neutral French oak barrels. The multiple lots were blended in January and bottled in February of 2024.
