After a career in horticulture and some time working in the restaurant business, Damien Bastian became interested in natural wine. He worked for a well-known Savoie-based winemaker, Dominique Lucas, before settling on 75 acres of chasselas vines in the Marignan appellation (Savoie) less than 1km from Lake Geneva. “Ça Boit Libre” is a play on words; drinking freely (without additives), and Freedom for Savoie (Savoie LIBRE).
The wine is a single-varietal Chasselas sourced from vineyards planted in 1985, facing west, and rooted in alluvial soils with a high clay content. The wine ferments spontaneously with native yeasts. It undergoes 12 months of aging in used oak barrels. The wine is neither filtered, stabilized, nor fined.
Aromatic, fresh, elegant and complex.
