'Tout ce qui est beau revient' is made exclusively from Gewürztraminer grapes harvested from vineyards in Obermorschwihr, Alsace. The grapes were picked at full ripeness with a touch of noble rot and immediately pressed to extract their rich flavors. Fermentation occurred over the winter in tank, followed by three and a half years of aging in old barrels without topping up, allowing for oxidative aging. Bottled unfined, unfiltered, and with no added sulfur.
Aromas of rose, lychee, and Asian spices, with fresh notes of citrus and sea salt. Slightly sweet on the palate, with a smooth texture and complex, earthy, and textured nuances developed from extended barrel aging.
