This wine was started in the same way as the winery has been doing with almost all the whites in Alsace since 2015. Two nights of oxidation of the juice before it was moved to a fiber cuve outside to ferment for about 4 months. Racking in the early spring was followed by almost 5 years of fermentation and aging in old barriques.
