A highly sought-after, bone-dry Junmai Ginjo sake crafted by the cult-status Akishuka Shuzo brewery located in Nose, Osaka Prefecture, Japan. Founded in 1886, this tiny brewery has achieved legendary status among connoisseurs due to its meticulous, estate-grown "seedling-to-sake" (ikkan-zukuri) philosophy led by owner Hiroaki Oku, who utilizes entirely organic, chemical-free Yamada Nishiki rice fertilized with the brewery's own recycled byproducts.
Despite being technically ultra-dry, Akishika's unique fermentation process dissolves a high level of rice into the brew, avoiding simple austerity to deliver complex layers of flavor. It boasts prominent acidity, a medium body, and a vibrant, crisp palate featuring subtle notes of pear, cucumber, honeydew, white pepper, and herbal earthy undertones.
