Baudili Negre is made with Cabernet Sauvignon, Xarel·lo and Parellada grapes grown on clay-limestone soils that the Cal Candí's family owns at the edge of the Garraf Natural Park in Catalunya. In the winery, the Cabernet grapes are destemmed to undergo a 15-day maceration and fermentation with native yeasts. It is then blended with 60% of the Baudili white wine from the previous vintage. Finally the wine is aged for 6 months in stainless tank and bottled unfined and unfiltered, with no added sulfur.
Light, refreshing and fruity, with a peppery finish, this wine is even better lightly chilled.
