l'Esprit Libre is Chenin Blanc made from three parcels situated in Rablay from vines 15-90 years old. The vineyards are plateaus of red sand and quartz gravel on schist. As always, this is non-interventionist winemaking, spontaneous fermentation, and the juice is left on the lees until summer. The wine is unfined, with very minimal sulfur added. The must ferments with native yeasts and is aged with its fine lees in stainless steel to accentuate the natural tension of the Chenin. It is fruity and crisp, with a strong saline core.
