Type: Red Wine
Organic farming. 1/3 each of Grenache, Cinsault, and Carignan hand-harvested from vines grown in decomposed limestone, quartz, and granite soils. The grapes spontaneously co-ferment with, first, a short carbonic maceration before pressing. Élevage lasts about 6 months before being bottled unfined and unfiltered, with no added sulfur.
Fou du Roi (The Jester) is a light to medium-bodied wine with complex aromatics and minerality. Notes of cherry and blackcurrant, with medium acidity, grippy tannins, and a long finish.
