Château de Béru has been around since the 12th century & in the family for 400 years. This Chablis is produced from a hillside vineyard rich in Kimmeridgian soil, mainly composed of crushed limestone and marine fossils. The vines are approximately 30 years old. After a conversion to organic viticulture, the domaine now also works biodynamically.
Fruit for this wine comes from 40 year-old vines. Hand-harvested, destemmed, whole cluster fermentation in stainless steel with indigenous yeasts. The wine spends 16 months in oak barrels before being bottled unfined and unfiltered, with no added sulfur.
