This is 100% organically-farmed Riesling from the storied Cole Ranch way up in the hills between Ukiah and Boonville. Whole cluster fermentation, direct press, spontaneous fermentation in polyethylene with indigenous yeasts. Aged 7 months in polyethylene. No added sulfur.

Not quite the expected version of Riesling, Elimelech exists to show you another way. Riesling can be flashy, fleshy and flamboyant. This wine is intoxicatingly scented, richly textured and still dry.
