Defaix’s family has been producing wine in and around this region since the 1500s. Defaix works almost exclusively with Chardonnay and his Premier Cru vineyard holdings are farmed entirely by hand and fertilized with natural compost and manure. 

Fruit for this wine comes from a 3.5 ha southeast-facing sloped parcel in the 5-ha subsection of Les Lys known as Le Clos du Roi, with average vine age of 45 years. Defaix owns 70% of this 1er Cru vineyard, and the Les Lys is his most classic expression of Chablis with remarkable finesse, length and longevity.

Notes of bergamot, white flowers and honey, with compelling freshness, excellent tension and complexity.
