This cuvée is sourced from two small organically-farmed vineyards on the eastern slopes of the Santa Cruz Mountains. Both are relatively cool sites for Cabernet Sauvignon in the region.

These grapes were fermented 100% whole cluster in a small open top fermenter. After around 14 days, it was pressed and racked to neutral barrels, and bottled after a 9-month elevage. This wine is unfined and unfiltered. 

This wines brings aromas of cured green olives, Mexican mole and black cherry. On the palate, the tannins are like fine dark chocolate, the initial astringent sensation melting into a soft, silky finish.
