Philippe Valette is known as one of the godfathers of natural winemaking, especially in the Mâcon. He organically farms his 15 hectares of Chardonnay vineyards on the best terroirs in and around the village of Chaintré. Harvest is done by hand, and yields are low. Valette's wines are noted for their concentration. They are tactile wines, expressing generous minerality and saltiness. Depending on the cuvée and the vintage, Philippe ages his wines in old oak from 6 months to as long as 5 years.

This wine comes from 40 year-old vines. No added sulfur. Aromas of zesty lemon, verbena and minerals. As with all the Valette wines, this is complex on the palate, saline and tightly wound with a perfect line of acidity to maintain energy and shape. This special wine has a plush mouthfeel and lovely long finish.
