Manual harvest. Traditional fermentation with wild yeasts in oak and chestnut vats at room temperature. The wine resulting from the previous process is then fortified, with fresh must added with grape spirit (acquavite), for the preparation of the so called "mistella."
This is a stunning off-dry Marsala with an amber color. Notes of clove and cinnamon give way to dried flowers, orange peel, and baked apples. It’s velvety yet not weighty in the mouth, with layers of flavors unfolding - salted almonds and caramel, grilled stone fruits, with plenty of minerality and brisk acids.
