Zaro is a wine and olive oil-making family whose ancestors settled Izola, Slovenia in 1348. They are deeply committed to their home land and the sea. Their traditions and rich heritage are carefully cultivated, yet the winery is constantly evolving with modern approaches, driven by advanced global trends in viticulture and enology. Their organic vineyards and olive groves cover 20 hectares of land on beautiful fertile slopes above Izola, offering breathtaking views of almost the entire coast of Slovenian Istria, the Gulf of Trieste and part of the Italian coast all the way to Grado, whose background is adorned by the majestic peaks of the Slovenian Alps, with Triglav and the Italian Dolomites during sunny days. 

This is a traditional red made from the Refosk (Refosco) grape, indigenous to the the Friuli/Venezia-Giulia region and to the Istrian peninsula (shared by Italy, Croatia and Slovenia).The exceptional location of Zaro’s vineyards on Pivol is prized, for making elegant and distinctive wines. Refosk typically has peppery notes and moderate tannins, and can yield a range of styles, from light and fresh, to heavier and more structured. This Refosk falls somewhere in the middle. It's both structured and refreshing, with great acidity and lift, complemented by mountain berry and black pepper notes, and a rustic quality. 

Fermentation was spontaneous and took place without temperature control in Slovenian oak. Maceration was 20 days after which wine was racked back into the tonne and aged for 1 year. Bottled unfined and unfiltered.
