Type: Orange Wine
Organic farming. This wine is a blend of two clones harvested at the same time including a few shriveled berries. 30% was direct pressed and 70% was whole cluster. Everything went into an open fermentation vat for 4 days of semi-carbonic fermentation with enough juice from the direct press to keep everything healthy. The wine was then moved into a French barrel and a glass carboy for 1 year on the lees.
It has just enough maceration for some extra texture, preserving the ample aromatics, and is just 12% alcohol. A unique and fresh skin-contact white.
