Organic farming. This wine spent two hours macerating with its skins post-foot treading. Fermentation occurred naturally with native yeast and without temperature control. The wine went through full malolactic fermentation. Mahlon aged on the lees for 5 months with one racking. The Arneis was bottled unfined and unfiltered. A small addition of sulfur was added after malolactic fermentation.
Classic arneis - fresh and lemony, saline breezy and savory. Snappy yet textural, with notes of little white flowers, bitter almond and miso.
