The Pradarolo farm is located in the Parma hills, in Emilia-Romagna, northern Italy. Husband and wife team Alberto and Claudia Carretti passionately craft wines using ancient techniques, low intervention and organic/biodynamic farming.
In the winery, the grapes are macerated with skins for 90 days. Fermentation happens with local yeasts and no temperature controls. It then ages in French oak barrels for 16 months and, once bottled, it rests for 6 months before being released. It is unfiltered, with no added sulfur.
Amber gold color, very aromatic, with mandarin orange, apricot, nectarine, ginger, jasmine, and spice. A citrusy acidity brings out flavors of stone fruit, lemon, mandarin orange, and thyme. Saline minerality on the clean finish.
