Domaine de la Pépière is one of the top estates in the Muscadet, run by Mark Olivier. Olivier harvests by hand and makes wine naturally, with zero pesticades, extended lees aging, and minimal intervention in the winemaking process, which is rare in Muscadet.
As with the rest of the Pepière wines, the fruit is direct-pressed in whole clusters and the juice settled naturally for 12 hours. It is then fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees for 2 years in large underground vats until being bottled without fining or filtering.
This excellent vintage for Muscadet has produced a beautiful wine with ripeness and maturity from the sunny, dry growing season, while retaining the customary acidity and freshness imparted by the clay/granite soils. The palate is full and framed in very firm acidity and citrus flavors, with a slight touch of smokiness. The Pépière Clisson is always one of the most elegant, silky and ethereal of all Muscadet.
