Sourced from the 3.7 hectare Sori Paitin parcel on the Serraboella cru, which is a fine site located towards the top of a slope with excellent exposure south-southwest at 280 to 320 meters in elevation, with calcareous clay and sandstone soil. Hand-harvested. Practicing organic and practicing biodynamic. Fermented in stainless steel using the submerged cap method. 40-45 day maceration. Aged for thirty-six months in Slavonian oak.
The nose is discreet but elegant, with strawberry and redcurrant aromas. Concentrated on the palate with dark fruits, spices, menthol, sage, rosemary and dried flowers. Balanced and persistent, with well-integrated tannins and acidity, showing grip without too much extraction.
