Pacina is made by husband and wife team Stefano and Giovanna Tiezzi who cultivate Sangiovese organically in harmony with their terroir in Chianti Colli Senesi. The most striking and impressive thing about the couple is how completely tied they are to the 'place' and Sangiovese particular to Pacina. The convent on the estate dates back to 900 A.D and Giovanna is the third generation to be its guardian.
The blend is 97% Sangiovese with 3% Canaiolo & Ciliegiolo, organically farmed. Alcoholic and malolactic fermentation took place in large cement tanks, and the wine spent three years in a combination of large Slavonian casks, old 500-liter barrels, and cement, with no fining or filtering before bottling and very minimal sulfur added during the aging. Bottled unfiltered, and further aged 12 months in bottle.
Stunningly concentrated and vivacious, with pure red fruits, flowers, and subtle spices.
